Recipe: Lemon Muffins
If you’re looking for an easy lemon muffin recipe for beginners you’re at the right place! I am sharing my tried and tested recipe for lemon muffins with vanilla frosting, hope you enjoy it. 🙂
Makes 8-9 muffins
Ingredients
2 eggs
100 g plain flour
1 ½ tsp baking powder
¼ tsp baking soda
100g yogurt beaten
150g unsalted butter
100g caster sugar
1 lemon (for zesting and juicing)
1 tsp vanilla essence
1 tablespoon fresh milk
150g icing sugar
Method for making batter
- Blend softened butter, yogurt and caster sugar well and set aside. Beat eggs until light and fluffy and blend both mixtures
- Add sifted flour, baking soda, baking powder into the mixture cutting and folding as you go along gently (this will ensure that the muffins stay light and airy)
- Zest the lemon and juice it well
- Add the zested lemon and lemon juice in the batter. Mix well and let stand for 30 – 40 mins
- Grease muffin cases with butter and pour the batter into each case filling it three-quarters of each case
- Bake for 30 – 40 minutes at 180 C mins or until a skewer comes out clean.
- In the meantime, prepare vanilla frosting
Method for making vanilla frosting
- Sieve the icing sugar into a medium sized bowl. Slowly add vanilla essence, melted butter and milk drop by drop constantly whisking until smooth. Watch out while adding the melted butter and milk, make sure you pour just enough to make a thick but smooth icing.
- Pour the icing into a piping bag and set aside
- Design the cupcakes with icing as per your choice, I threw in some coloured sprinkles too
