Recipe: Grilled Tikka Salmon with stir-fried veggies
I am not a big seafood fan, but I can never say no to shrimps, king fish and of course Salmon. A rich source of protein and packed with omega 3 fatty acids, one can serve salmon in many ways – grilled, baked, broiled you name it. I recently tried using a tikka masala base for my salmon grill and I was pleasantly surprised with my experiment. So what are we waiting for, here goes!
Method:
- In a large bowl, mix all the ingredients for the marinade to a fine paste.
- Dip and coat each steak (or cut fish pieces) in the paste and set aside
- Let the marinated fish stay for 2 to 3 hours (give it atleast 30 mins for the marinade to seep in)
- Line a flat tray with butter paper and place the steak leaving sufficient space between each steak
- Preheat the oven to 180 degrees for 15 mins
- Grill each side for 20 mins (adjust as per oven settings)
- Once done, remove the steak from the grill tray and place it on a serving dish
- Garnish as desired with coriander leaves, onion rings or cut lemon slices
Feel free to pair this yummy grilled tikka salmon with some stir fried veggies!
- In a large wok, add few drops of olive oil, red chilli flakes, garlic powder and toss in cut potatoes and carrots (boiling them before hand reduces stir fry time)
- Once potatoes and carrots are nearly cooked, add chopped pieces of beetroot, broccoli, mushrooms and any other vegetable requiring few minutes of stir fry
- Add grated mango or few pomegranate seeds if you wish
- Serve in a large salad bowl
